.Family.Food.Fun. (Recipe Included ;])

So last night we had Matt's brother, Andrew, and his girlfriend Megan over for dinner and games.  This is something I want to start doing more often. Family is so important and sometimes it is so easy to go on with life not even knowing what is going on in the life's of those dear to you.  God gave us families for a reason; to love and care for eachother always.

Megan came over before hand and we cooked the boys dinner.  Megan is a vegetarian, so finding a recipe that everyone would like was somewhat difficult, seeing that Matt doesn't really care for veggies and so on.  I ended up finding a pizza recipe that was so easy to make and was pretty tasty!

Vegetarian Pizza:
Ingredients:
1 roll of pizza dough
Basil pesto
1 C Shredded cheese
Green olives
Red peppers
Sun dried tomatoes
2 hand fulls spinach leaves

Recipe for homemade pesto:
Chop 5 basil leaves,  a handful of italian parsley, and 3 cloves of garlic. Add these to a food processor along with a few tablespoons of EVOO. Pulse until a spread forms.

Recipe for Pizza:
Preheat oven to 500 degrees.
Roll out pizza dough.
Spread pesto sauce evenly to cover dough.
Add cheese and veggies.
Sprinkle spinach leaves on top.
Bake for 12 minutes.

It was so nice getting to know Megan a little better while we cooked, we had a nice chat and some laughs while the boys were getting off work.  The boys came over and we ate the yummmo pizza! We then went to go get some icecream for dessert and came back to the house for some games (Apples to Apples and Catch Phrase). We had lots of fun!

I look forward to making this a monthly tradition and spending time with the family we have close!
